St. Patrick's Day Green Velvet Cupcakes!

What better way to celebrate St. Patrick's day than by eating all things green!?
We have a recipe coming at you to get right in this mood for this holiday by the lovely Laura from The Zillenial Cook, who has teamed up with us to show the various ways you can use Good Eats Products!
We're starting out the series with one of the most common baking products: Flour! Just with a twist - we will be using our Bakers Blend Complete Flour Replacement to do the trick. This 1:1 gluten free blend is wonderful for imitating real flour!

Cupcake
1/2 cup, vegetable oil
3/4 cup, sugar
2 eggs
1/2 tsp, vanilla
1 cup, bakers blend complete flour replacement
2 tbsp, cocoa powder
1/4 tsp, salt
1/2 cup, oat milk ( or preferred plant based milk)
1-2 tsp, green food colouring
8 oz non-dairy cream cheese (about 1 pkg)
1/4 cup, non-dairy butter
1/4 tsp vanilla
3 1/2 cups, powdered/icing sugar
Instructions:
Cupcake Recipe:
Once combined, add your eggs and vanilla and beat with an electric mixer for 1 minute.
To your egg mixture, add your flour, cocoa powder, salt and oat milk. Beat again with an electric mixer for 1-2 minutes until smooth.
Add your green food colouring, and mix until batter is a consistent green colour with no brown streaks.
Spoon your batter into a prepared cupcake tray with paper liners. Fill the liners about 3/4 full.
Bake in the oven at 375 for 15-20 minutes, until tops are smooth and a toothpick inserted comes out clean.
Top with cream cheese frosting and sprinkles!
Cream Cheese Frosting Recipe:
To the bowl of a stand mixer add your cream cheese and butter. Cream on medium-high until smooth (about 3 minutes)
Add your vanilla.
Once smooth, lower speed to low, and add your icing sugar, 1 cup at a time. Once all sugar has been added, turn speed back up and continue to beat for 3-5 minutes.
Frosting is done when it is smooth with no lumps.
